You can enjoy exceptional fish that you can only taste here in Ehime Prefecture.I realized that the way fish is prepared completely changes its texture, flavor, and aroma. It was quite an experience.Today, the sweetfish bone crackers were delightful. The bitterness and umami of the sweetfish paired perfectly with the Japanese sake. The conger eel soup was surprising with its large pieces of eel. One was deboned, while the other was simply cut with bones intact. Each had a different flavor, which was interesting. The broth was rich with the essence of the eel and absolutely delicious. The large conger eel from the waters off Imabari was, as always, incredibly tasty. I love its firm texture, sweetness, and unique quality. For the final rice dish, the corn butter rice was almost entirely corn, and the sweetness was wonderful. The soft-shelled turtle porridge was even better than at specialized turtle restaurants. The way the egg was incorporated was smooth and beautiful. I was completely satisfied.Whenever I come to Matsuyama, it seems I can’t do without Dogo Kaishu. This is a meal you can’t get in Tokyo, no matter how much you spend. It truly feels luxurious. It was a great meal!
