Chef Pagan took something extremely ordinary and made it EXTRAORDINARY!

Hummus is the last thing I feel like eating (borinnnnnnnnggggg) unless is extremely well executed and I was fighting over this one with everyone at the table. (I was actually in defence mode, because I was ready to fight anyone, friend or foe who said they didn’t like it) Luckily I didn’t have to, because Latin women or dangerous!

Excellent Idea & Excellent Execution!

Chayote is a modern Puerto Rican restaurant that’s inclusive to everything Latino.

As most of you know the majority of Latin American Countries have a Spanish background due to colonization.

This means that Latin American cuisine has a lot in common and this dish shows the culture knowledge of the chef and his abilities as a savvy cook.

At a glance it’s an Italian dish, but it’s so much more. The twist with the romesco took it Spain and the ropa vieja took all over Latin America.

Lastly, the 12 layers made it seductive and the pan sear on the pasta made it decadent.

Accompany all this by some of the best vibes in town and superb cocktails and you’re set to have a phenomenal time.
