The restaurant I visited was L’Arcangelo which specializes in traditional Roman cuisine with a mix of other influence (more in next post). I had a dessert that really intrigued me : this “White liquid chocolate, capers, candid ginger extra-virgin olive oil”. Wow! It did not look like much but when I put my spoon in, you see in the video, it was so smooth and glides on the spoon with a #sheen, probably because of the olive oil. The restaurant I visited was L’Arcangelo which specializes in traditional Roman cuisine with a mix of other influence (more in next post). I had a dessert that really intrigued me : this “White liquid chocolate, capers, candid ginger extra-virgin olive oil”. Wow! It did not look like much but when I put my spoon in, you see in the video, it was so smooth and glides on the spoon with a #sheen, probably because of the olive oil. It was very sweet and a tad savory but the liquid form of white chocolate, with ginger pieces that are spicy like Indonesian candies (you know those ones?) was so great. And the aroma of olive oil, and the touch of capers for savoury and acidity but not overwhelming. What a brilliant dessert that allows me to rethink about white chocolate as a whole.

The little Beignets with citrus cream and caramel (Pic 3-4), and the final “Morbido di ricotta”, soft ricotta, sour cherry, chocolate had a velvety texture like smooth veloute of ricotta, very sweet but tasted so great #littlemeg_best2019
