People don’t realize how hard tableside service actually is…
Timing, temperature, presentation, smoke, fire, cheese pulls, carving meat in front of guests… one tiny mistake and the whole illusion falls apart.
It takes serious attention to detail to pull this off consistently.
Is it perfectly polished fine dining?
No!
