About
Humus x Hortense is a pioneering fine dining restaurant & cocktail bar. It is place where local crafts are expressed everywhere in its magnificent Art Nouveau inspired interior. The plant-based tasting menu is created by chef Nicolas Decloedt who learned his skills in renowned star rated restaurants in Europe (Mugaritz, Bon-Bon, In de Wulf). Each ingredient of the tasting menu is locally sourced, in season and based on sustainable production methods. For these efforts, chef Nicolas Decloedt is voted the Best Vegetable Chef of 2019 by Gault & Millau. Mixologist Matthieu Chaumont is responsible for the botanical cocktail pairings matching each dish of the tasting menu. Co-owner and sommelière (WSET certified) Caroline Baerten carefully selects the natural and biodynamic wines.
