Those countless Karama, Al Quoz and Deira “Tikka Lemon” kebabs, along with the laughter and friendships that came with them made a lasting impression with Yana.
Her father, who spent a decade studying in France, introduced her to exotic dishes far beyond her familiar Syrian childhood food - dishes like Steak Tartare. These formative memories and experiences inspired her @tabaq54 dish, Loomi Steak Tartare, ten years later.
Yana’s Loomi Steak Tartare is made from chopped tenderloin with Dijon mustard, preserved lemon, black lime powder, and her signature tamarind gel, inspired by a version she discovered at the Bahraini kiosk in Global Village. It is served alongside homemade potato chips dusted with Shiitake seasoning.
Chef @yana_tarabeine , born in Syria, moved to the UAE, by way of Lebanon and Saudi, found a passion for food through regular meals with her club volleyball team, where dishes like Biriyani and Mashboos, introduced her to a world of flavours and ingredients previously unknown to her.
With an @iccadubai_iccaabudhabi diploma, an internship at @21grams.dubai with @chefmilanj and countless hours spent “Yanafying” dishes, Yana’s cuisine perfectly represents third-culture cooking.
Curious, passionate and talented, Yana will play a big part in the future of Dubai’s culinary evolution. A cuisine born from the communities she grew up in, shaped by the memories of her journey.
