The 2nd generation taishou trained in Hokkaido before heading back home to take over the family business in 2013. Superb ingredients with a unique technique for the final step of each nigiri. Various blends of vinegar for each neta works extremely well with the range of sakes available on offer and man.. that uni.... boom!
