Last night I experienced a special dinner by @marcuscooks and @concessionsinternational in Philly!

@concessionsinternational is a Black family-owned food and hospitality company founded by Atlanta entrepreneur Herman J. Russell in 1979. For decades, they’ve built a presence in airports across the country, operating food and beverage concepts that bring both national and local brands to hungry travelers.

For this experience, they worked with @culinaryinnovators to tell Marcus Samuelsson’s story through a five-course dinner built around the five senses: Berbere & Hibiscus Salmon for sight, Crab & Scallop Dumplings for smell, Pan-Seared Snapper for sound, Aged Tomahawk & Maple-Smoked BBQ Short Rib for taste, and Poached Apple Pavlova for touch.

I experienced pieces of Marcus’s life through sound, scent and touch while hearing stories about Ethiopia, Sweden, his grandmother, family, personal style and more.

Such a creative way to celebrate storytelling, culture and food, and a really cool introduction to the work @concessionsinternational is doing!
