It had been a while since my last visit to Kentaro Takahashi.Every time I come, I am amazed by how quickly the restaurant evolves.The dishes are prepared to highlight the quality of the ingredients, using minimal salt.After hearing the chef explain the extensive time spent on preparation, it all makes sense.It's incredible how they achieve such flavors while keeping the calories low and salt content minimal.They even have a specialist review the ingredient composition once a month for research.It's truly impressive.I can't understand why this restaurant hasn't received a Michelin star.
