I visited this place during the Golden Week holiday through a reservation on Tabelog as part of my journey to explore the top 100 restaurants. Upon entering, I found that there were only 8 counter seats in this Italian-inspired innovative restaurant located in Kyoto.Here, they only offer an Omakase course, and I also ordered some wine to accompany it.The course I ordered beautifully reflects the chef's deep affection for his roots in Shimane, evident in various aspects of the menu. Among the dishes, the "Cold Pasta with Firefly Squid" featuring a refreshing combination of tomato and orange, and the "Poached Egg" with its rich flavor, were particularly memorable.
