Almost exactly one year ago, on the 9th of May 2025 I had the greatest gastronomic experience of my life at
@sugitakakigara Nihonbashi Kakigaracho Sugita 日本橋 蛎殻町 すぎた - widely considered the best sushi-ya in the world and ranked number on @tabelog_japanbylocals 🥇

And this experience will stay with me forever as one of the most profound experiences. I imagine this is what it feels like walking into Maracanã for the World Cup Final or Queen at Live Aid.

Sugita-San is like a walking sushi philosopher like Plato or Aristotle, full of proverbs, wisdom and perspectives larger than life. As he says, he cooks the rice with his imagination for Japanese people believe there is a god in everything, also in the rice. And Sugita-Sans Shari is indeed otherworldly 🍚 🍣

Takaaki Sugita has an aura that glows, he dances like in a ballet - full of energy and joy and he says:” I have stage freight every day, but I am happy when I make people happy” 🥹

And Sugita-San did not only make me happy, he created a memory which I will forever cherish.
