Taking over the former home of Sushi Anaba, the young team led by @emilhasssan and @valdemarjunge blends kaiseki sensibility with classical French technique.
Think Norwegian snow crab with the first white asparagus, jambon persillé with eel, and pigeon.
It’s not flawless yet, but it has identity, ambition and serious potential.
Akmē is one to watch.
