Trüf mantarı tophaneyle (pideyle) buluşursa! Black truffle meets Turkish pide.

This is Tophane pide, one of my favourites, from Giresun on Turkey’s Black Sea coast. It is simple and direct. Round, compact, with a dough that bakes crisp and crunchy rather than soft or stretchy. My favourite one is @hacapuripide (although I am not a big fan of other pides there). Make sure you ask for it as it is not on the menu.

After baking, the top is lifted off like a lid. Egg yolks go in, followed by a generous amount of butter. The lid is put back on and the heat does the rest. The butter melts, the yolks loosen and the inside turns rich. Very rich! More butter is brushed on the sides and the top.

If you happen to have truffle in your pocket, black or white, it fits easily(!)
