💫 Nine months since clinching a @michelinguide star (and hopeful of, at the very least, retaining when the ceremony is held in Dublin for the first time next February) does @the_morrisonroom still blaze brightly?
@adam.nevin’s signature tasting menu (€150pp) may put a premium on local provenance but there’s a youthful thru-line to this young chef’s menu, who returned from the UK to win his hometown of Maynooth a #Michelin star for the fine dining restaurant of @cartonhouse.fairmont, which is like dining in the stately rooms of Dublin Castle or in the National Gallery, surrounded by pricelessness.
The room is all neoclassical splendour, stuccoed vaulted ceiling, domineering Corinthian columns, damask wallpaper and gigantic portraits flanking a marble fireplace but the playlist belies the Regency setting with a mix of ambient, textural, lo-fi instrumentals that might be more familial in the dining rooms of Brat in London or Variety Jones in Dublin…
