Lamb with Saffron Risotto @lucaturcirestaurant

This new spot is intimate, chic and romantic. I think it’s great for a date night on Park Ave!

It’s only been open for 2 months and the main courses reflect it.

I had 2 of the show stoppers and they were both a work in progress. They felt like a great idea that hadn’t come together.

This dish in particular had a pretty flawless saffron risotto, which is hard to get in the city, so the cooking chops are clearly there.

The main issue was the lamb, which tasted good, but wasn’t visually appealing and was crying for some sauce.

It’s like a Monet; at a glance it looks amazing, but when you get close the lamb looked pretty rough, like it had been boiled by some vagabonds.

Lamb is a little gamy, especially when undergoing this type of cooking process. This is why it should be served with some sauce made from its braising liquid.

I really enjoyed the baldness of the dish, but the lamb needs to be refined.

Dealing with the connective tissue and the brown & purple meat without a coat of sauce isn’t an easy task for the average dinner.

We are all small changes away from greatness, in my mind; like humans, dishes and cooks go through the same journey.

Looking forward to come to see how the menu evolves!
