This is definitely their version of a Carbonara through very American eyes.

Heavy cream & Peas vs Egg yolks

I’ve been in Orlando for 19 years and until the last 6 years you couldn’t get a traditional Italian carbonara. I’m extremely happy I can now get both.

Completely different, but just as good!

On a personal note, I would go lighter on the peas and maybe use Pecorino Romano instead of a commercial Parmesan.
