This is the restaurant owned by Tanabe, who took over from the popular Shimazu, originally from Linda, and has successfully elevated it to a reservation-only establishment.Tanabe's sushi features rice seasoned with red vinegar, gently pressed to the point where it crumbles in your mouth, allowing you to experience the perfect harmony between the fish and the rice. To ensure the rice is at its best, they replace the rice in the hand mold immediately after four pieces are made.For tuna, they usually source slightly smaller ones from Yamakou, focusing more on aroma and tenderness rather than fat content.Every time I visit, even once a month, the menu changes, and the sushi and appetizers come out in a well-paced rhythm, creating a delightful flood of delicious dishes without any waiting.This time, they had a summer tuna weighing around 160kg, which was larger than usual. It had a pleasant acidity and just the right amount of fat typical of summer tuna. This was also my first taste of red sea urchin this season, and it was truly exceptional. I also enjoyed two pieces of the almost-ending season's torigai (bird clam) as an appetizer!Although it is already a reservation-only restaurant, I feel it might be slightly underrated in the community due to its youth and continuous growth.
