Ever since he was at Ranmaru, the taisho's charisma and the execution of his nigiri was top notch. So, when he went independent, naturally the bookings blew up, so it took me quite a while to finally make it here. It was a nice surprise to see the progression in the nigiri style and flavour in a positive way.. more balanced on the vinegar, better size cuts of neta and just an overall a more refined experience. There is more focus on a variety of fish instead of just tuna, and whilst taisho's demure is still that of casual banter, there is definitely a new level of seriousness in him!
