One of the sushi temples for food lovers, this is one of the benchmark sushi shops in Tokyo. For me, when he is on form, this place is definitive, although sometimes the variation can be a little too pronounced. On this occasion, his nigiri balance was on point, showcasing near precise seasoning in both his shari and nikiri. The choice of neta is, of course, at the highest echelon, with his tuna highlighting some of the most perfected tuna around. I would have been happy to focus more on the nigiri on this occasion but there a few half decent otsumami for good measure.
