Started the Norway trip with Hyde, based in the same shop that housed the legendary Pjoltergeist a few years back.. course menu dining with a large number of Japanese inspirations with almost each dish featuring some variation of a Japanese ingredient. Solid presentation and execution starting with some discrete flavours before showcasing ingredient driven dishes. Great, bar-esque vibe with a cool wine list to match, with great somm recs.
