Excellent Shoyu Paitan Ramen (with chashu, shoyu egg, bean sprouts, wakame, green onions, greens) at B-Dama ビー玉 in Old Oakland. The version served here is a collaboration between chef Asuka Uchida and line cook Allan Wan, who worked at Oakland’s Ramen Shop for three years before his current gig. There's even a small scoop of yuzu kosho added to give the bowl a spicy kick to it.
