Late lunch in Nagano at a spot famous for their sauce katsudon. It's made with a 12 ingredient sauce that has been maintained throughout the 30 years of the dish’s history; the pork used must be of a rib eye soft cut with perfect fat to meat ratio to qualify for the dish. Also ordered a bowl of Zaru Soba, which is the signature food in Nagano. When we come back to Nagano in the future, we'll visit one of the proper Soba specialty shops.
