Thoroughly impressed with our meal at 2* Tsuruko (つる幸) in Kanazawa, which is a family-owned institution in this region that is considered to be a "mini-Kyoto". It was one of the best traditional Kaiseki meals we've ever had! The ingredients and produce used were exceptional, with seafood coming from the Sea of Japan and vegetables from the Kaga fields. The kitchen is now run by the son of the original Chef and Founder.
