The same ingredient transforms its personality with each plate.It pierces the senses with its aroma, silences with its sweetness, and disappears with its smooth texture. With each bite, my shallow knowledge and arrogant perceptions of soba are peeled away, one layer at a time.The chef's presence is more akin to that of a sage than a craftsman.There’s no unnecessary friendliness or exaggerated theatrics.What’s present is the quiet madness of a person who has engaged in a dialogue with soba flour, water, and fire for decades.And the dishes themselves?
