Recommended bowl: Yuki ramen

Ramen Yamate is named after the famed road along which it is located-- Yamate Dori. There are now three branches total in Tokyo, with the original open since 2005. The recommended bowl is the 'yuki ramen,’ which consists of a light, non-oily pork soup with finely dispersed pork back fat that looks like snow (yuki=snow), emitting a naturally sweet fragrance. Topped with pork chashu, bamboo shoots and bean sprouts. Run by company president Tatsuro Sakata.
