Shoyu soup uses pork leg bones, back bones, trotters, sake-bushi (dried and smoked salmon) from Hokkaido and several other types of dried fish. The stock is made by slowly simmering the ingredients at a low temperature. Noodles are by Kanno Seimen, containing domestic wheat and sea salt from Okinawa.
