Matador, famous for their beef ramen, updated the recipe recently. Popular shops often do this to keep things fresh. The renewal keeps the beef but adds some tender pork and balances things out with chicken oil.

They do frequent limited bowls. It’s getting hot in Japan, so I need to eat more chilled ramen.

Master Iwatate-san opened Matador in 2011, just as a mini boom in gyukotsu (beef bone) ramen was sweeping Tokyo. Matador immediately placed itself at the forefront of the nascent scene by winning a bevy of awards from ramen critics and Tokyo food magazines.
