あさひ町内会 (Asahicho Naikai in Itabashi, Tokyo)

Tokyo has numerous miso ramen shops, with new ones opening each year. This shop uses white miso and freshly grated ginger, with yellow noodles from Hokkaido and three types of white miso wok-fried with vegetables. A thick layer of lard on top adds a touch of elegance. Asahicho Nankai, opened in February 2020, is located in Itabashi, a peaceful neighborhood on Tokyo's north side.

Tokyo has its share of miso ramen shops, with new shops opening every year. Most make their way to the metropolis via Hokkaido and the legendary shops of lore in the great north. That’s a short way of saying that they use white miso and have freshly grated ginger as a topping. While the details are rather generic, a solid bowl of miso ramen is a thing of beauty.

Recommended bowl: Sapporo experience

Sapporo style miso ramen, opened by a master with enough pedigree to create a buzz. Motoyama-san trained at the Sapporo shop Sumire for over 10 years before opening this shop in February 2020. The tonkotsu based soup is made from pork bones, gyokai and vegetables. Blended in a wok with hot lard, creamy miso, and topped with grated ginger. Tamagomen noodles are provided by Sapporo-based Morizumi Seimen. Shoyu also available, but the go-to is the miso.
