つけ麺 道 (Tsukemen Michi in Kameari)
The author visits the best tsukemen shop in Japan, Michi, which opened in 2009 after the master, Nagahama-san, left Honda. The shop offers a refined soup with pork, chicken, and dried seafood, with separate toppings for each bite. The small bowl of sauce changes daily, making it a repeater. The soup is priced at 500 yen and the special at 1000 yen. Despite not making their own noodles, the shop is solid and worth visiting.

usually i find 魚介類 (fish bone broth) based tsukemens to be overly rich and salty, but was craving this on a cold, icy day so decided to head to michi on the outskirts of town. please be reminded to check their twitter/social media platforms as somedays they do special flavours and not the original fish bone broth.

thoroughly impressed with the broth here, rich and deep but surprisingly not cloying nor overly savoury. the noodles here were also strong in wheat flavour and adequately chewy which i like. toppings however were a let down, chasiu was rough and store bought pickled bamboo shoots were served. half of an ajitama was also mediocre, chicken meatball can also be skipped. small portion for girls also comes with a free creme brulee of course in which i tried, quite a nice sweet finish from such a rich lunch. a great spot for this type of ramen in the city, horrible topping but generally recommend!

Michi is known for its famous tonkotsu-gyokai tsukemen, considered by some to be amongst the best in Tokyo. The soup here is made from chicken, gyokai and pork bones, with noodles specially ordered via Kanezin. Master Nagahama-san started his apprenticeship at Kashiwa Taishōken in Chiba (since closed) when he was 21 years old. The soup here is made from chicken, gyokai and pork bones, with noodles specially ordered via Kanezin. Master Nagahama-san started his apprenticeship at Kashiwa Taishōken in Chiba (since closed) when he was 21 years old. He ate tsukemen there for the first time in his life when he was working as staff. He later helped out and learned from Honda-san of the acclaimed Mendokoro Honda in Higashi-Jūjō. When Nagahama-san opened Tsukemen Michi, he was just 22 years old. Since 2009.
Important side note: On Monday and Tuesday, Michi suspends its usual tonkotsu-gyokai tsukemen and becomes 'Ramen Michi No Shio,' serving only shio ramen and shio tsukemen. The shio menu is undeniably solid, but the menu available on regular days is much more recommended. Less
