É este um daqueles pratos que por si só faz valer a viagem a Cáceres, ao Atrio ⭐️⭐️, restaurante que recentemente foi notícia por ter visto a sua garrafeira (uma das melhores do mundo) assaltada, num enredo que daria um filme (1.7M€ em vinho).

Um momento surpreendente por diversas razões, começando desde logo pela textura da papada, de grande suavidade, que tem uma densidade que bem recorda o Pudim Abade de Priscos (e, nem de propósito, também este faz bom proveito da gordura do Porco). O ‘caramelo’, para além da untuosidade, acrescenta doçura e um leve amargor, sendo tudo isto realçado pelo a salinidade do caviar, que na boca faz explodir todos os sabores, tal a generosidade com que aparece pelo prato (e se assim não fosse, era abafado. Não foi). E que belo momento este. Se pela boca me passar algo de tão emocionante em 2022, o ano que ainda não começou, já terá valido pena. Less
