Recommended bowl: Lake Shinji Clams

The full name of this shop is Shinjiko Shijimi Chūka Soba Kohaku. Shinjiko refers to Lake Shinji, located in Shimane prefecture. Shijimi are the clams used in making the soup, with all the shijimi clams used here sourced from Lake Shinji. The go-to is the shio ramen, containing almost a pure clam soup, but also with just a hint of chicken. There is also a shoyu with a soup that is more of an even blend between clam and chicken.
