Recommended bowl: Legendary roots

Saga style tonkotsu made with yobimodoshi pork bone soup. Recommended to get your bowl topped with a raw egg yolk, perfect for noodle dipping. Another specialty side menu is the local nori seaweed sourced from the sea of Ariake, served dried or grilled. Put each slice of nori in the soup for one minute soaking up the liquid goodness. Run by master Uchida-san, who trained at the legendary Saga shop Motomura (open since 1980). Motomura's master trained at Ikkyūken, another legendary Saga shop which is now closed. Ichigen open since 1998.
