Recommended bowl: OG Taiwan ramen
Open since 1960, this huge Chinese restaurant is somewhat of an institution in Nagoya, and has a handful of smaller branches, including one in Tokyo. The shop's claim to fame is that it is known as the originator of ‘Taiwan Ramen’ — a fiery hot chicken-based soup served with thin curly noodles, topped with chives, minced pork and lots of chili pepper. Crazy spicy-hot but super flavorful, Taiwan-style ramen is now popular across Japan and served by countless shops. This here is the OG, unchanged for decades. Open until 2am and popular for late-night visits.
