Chef Zac Spierings with tres leche cake served with the amazing selection of citrus from @thefallsfarm in the form of fresh curd, a fluid gel and the zest is kept and dried and mixed through the meringue rods sitting on top of the @republicadelcacao roasted corn white chocolate. Little smear of mezcal caramel underneath it all.
