Dinner at Kimoto (紀茂登) in Kobe, one of the highest rated kaiseki restaurants in all of Japan. It's the reason we traveled to Kobe. This was an excellent meal and on par with the top places in Tokyo and Kyoto. Chef Yasuya Kimoto opened this 7-seat restaurant in 2010 after training in Kyoto. The food is simple, but complex with an incredible depth of flavor. The subtleness of Kimoto-san's cooking really shows as we progressed through the meal. Only a true master can execute at this high level. ?
