Chef Gen Mizoguchi revolutionized sushi in Las Vegas when he opened Kabuto in 2012. It was previously our go-to spot for sushi in the area. He left in 2014 and opened Yui Edomae Sushi. Everything he did at Kabuto is only intensified here: the same pristine cuts of fish, many of which is flown in daily from Japan; the same small, minimalist setting; and the same omotenashi (“the spirit of selfless hospitality”).
