Another excellent sushi lunch at Namba.
His ankimo is outstanding, he cuts away huge junks to leave just the inner core. Sweet and flavorful it melts in your mouth and just leaves a marvelous lingering taste behind.
The nigiris are also well executed and sourced. The sea bream being today’s favorite of mine.
He is famous for matching the temperature of the rice and the fish in order to bring out the best. It is quite interesting to eat this as some of the nigiri have 10C difference between the rice and the neta.
