This may not look like much but this little bouquet of grilled ramson brushed with scallop fudge was one of the most tasty servings at the @nomacph seafood menu. The sweet caramel, the salty taste of the see at the garlicky note from the ramson ... simply divine .

While we are waiting for the vegetable season to begin, here's a picture of an extraordinary lumpfish roe serving from the recently finished seafood menu @nomacph - the roe was mixed with confit of egg yolk and an umami-rich sauce based on fermented grains. So much creaminess, richness and subtle textures - bravo! .
