L’Oste Scuro in Verona is a restaurant for people who take seafood seriously. The focus is firmly on the sea, but the cooking goes well beyond a conventional Italian fish restaurant. Our dinner moved from pristine oysters through calamari with bottarga and dill, octopus with roasted aubergine, and an elegant amberjack tiradito with sorbet and caviar. “Entrando in mare” captured the restaurant’s playful side, while spaghetti with sea urchin and burrata delivered the richness you hope for from Mediterranean cooking. Black cod with purée, caviar and crème fraîche was luxurious, while charcoal-grilled amberjack brought welcome smokiness and contrast. A pistachio semifreddo with berries finished the meal. What impressed me was the balance between excellent raw ingredients and contemporary technique: the seafood remains recognisable and central rather than disappearing beneath unnecessary complexity. L’Oste Scuro feels polished without becoming formal—a very good seafood address in the heart of Verona.
