Teuchi Soba Jiyu San is quite difficult to access.There are waiting seats inside the restaurant.On a weekday, I was able to get in right away by arriving before opening.It seems there is no background music playing.Soba with grated yam (small) - JPY 500This dish is served relatively quickly before the soba.It contains buckwheat kernels and chopped yam. Instead of a typical grated yam texture, the yam is crunchy, which is nice, but personally, I would appreciate it more if there were some grated yam mixed in for a smoother texture.Both the seiro and inaka soba are wonderful.They are so beautifully made that I wondered if they were hand-crafted. They have a fresh quality, and even in August, they still have a pleasant aroma.The soba dipping sauce is unique.It has a hint of sweetness and does not have a strong bonito flavor. It pairs well with the soba-yu (soba water), which has a moderate thickness.I considered trying it with salt and wasabi, but the salt was rock salt and gritty, which made me feel like it would be a waste to combine it with the soba's texture, so I enjoyed it mainly with the dipping sauce.Both the owner and the hostess are incredibly pleasant, and the selection of sake is fantastic. The counter and the tableware are also lovely. This is a wonderful soba restaurant that truly conveys a love for soba.
