After two months, I returned to Asaya! ♡ I've been a regular since they opened, but I don't think I've ever felt such a clear sense of "change" and "evolution" as I did this time. Of course, I’ve noticed gradual updates with each visit, but this time, even within dishes that seemed similar to my last visit, there were distinct differences that communicated the changes remarkably well. ✨ Especially in how they approached seasonal spring ingredients. The aromas, temperatures, and flavor combinations were more refined, and I found myself thinking, "Ah, they’ve opened a new door again," multiple times. I was with my usual food-loving friend, and they also remarked, "It feels like there’s been a sudden transformation this time." Having been a long-time patron, I could sense that unique shift in the atmosphere. They are evolving, yet their core remains steadfast. I truly think that’s impressive. And above all, the chef's curiosity is remarkable. I genuinely worry about how he manages to study and rest while running the restaurant at such a level. But that dedication is clearly reflected in the dishes. Humble, serious, and hardworking. That’s why it’s a place you naturally want to support.
