To Yamasaki✨This is the only restaurant in Tokyo where I continue to make my own reservations. It had been quite a while since my last visit, and I was reminded once again that this place is truly exceptional.Every time I come here, I am amazed by how Yamasaki keeps evolving. They have a keen sense of the ingredients' natural flavors, never overdoing it, yet not too simplistic either. With minimal seasoning, they bring out the maximum umami, making me appreciate the greatness of Japanese cuisine every time.Moreover, it’s not just about the delicious food; they consistently present a different experience each time. The temperature, aroma, texture, tableware, and flow of the meal… They engage all five senses, drawing you in as the course progresses.I recently heard they opened a new location in Taiwan, and I admire their momentum and continuous spirit of challenge. Yet, this restaurant maintains a calm and beautiful atmosphere that makes for a truly pleasant experience.It’s one of the few places that naturally makes me think, "I want to keep coming back," rather than just "I want to visit again."Thank you for another wonderful meal!
