Today, I set out to find delicious food that truly matches its value. I visited the renowned "Sushi Jube," known for being a difficult reservation spot, all the way in Fukui. This popular restaurant has received the 2026 Silver Award on Tabelog and has also been selected as one of the Top 100 Sushi Restaurants in the West for 2025. What I was most looking forward to this time was, of course, the seasonal fish unique to Fukui. I enjoyed a variety of seasonal ingredients from the Hokuriku region, including Toyama's ara (fish), Hokkaido's surf clam, Toyama's white shrimp, Fukui's katsuo (bonito), and Noto's mahata (grouper). The chawanmushi (savory egg custard) made with Hokkaido's hairy crab, boiled octopus from Ishikawa, and swordfish from Kagoshima were also delicious, providing a delightful experience even before the sushi began. The nigiri included Himi's isaki (grunt), Fukui's sawara (Spanish mackerel), Toyama's amaebi (sweet shrimp), shimaaji (striped jack), swordtip squid, red tuna, aji (horse mackerel), katsuo, ikura (salmon roe), bafun uni (sea urchin), chu-toro (medium fatty tuna), anago (sea eel), and finished with tamagoyaki (Japanese omelet). I found myself wanting more, so I added a kanpyo maki (dried gourd roll) as well! (o^^o) The charm of Sushi Jube lies in its ability to showcase local ingredients from Fukui. While they source delicious fish from all over the country, it’s wonderful to enjoy fish that can only be tasted here in Fukui. Additionally, during crab season, they offer courses featuring Echizen crab, so there will be different ways to enjoy the restaurant as the seasons change. This is a place I want to visit repeatedly, not just once. If you're looking to enjoy sushi in Fukui, this is a spot to remember! ☺️ If you're interested, please check it out! ☺️ I post daily records focusing on lunch and sweets, so if you like it, please give it a "like♡" or save it!
