Despite frequent menu changes every two months, the quality and consistency of each dish are exceptionally high.This course focuses on "spiciness," but it avoids the folly of relying on a single type of stimulation. Instead, it employs a logical design philosophy that skillfully balances various flavors such as mala, green chili, sour-spicy, black pepper, and fermented seasonings.The technical precision is most evident in the "Wagyu Chinjao Rosu (Stir-fried Beef with Green Peppers)." This dish deconstructs the traditional method of high-heat frying and instead uses low-temperature cooking to achieve a delicate finish on the Wagyu strip loin. The finely sliced green bell peppers are prepared separately to maintain their texture and moisture, creating a layered structure.The melting point of the beef, the sweetness of the fat, and the crisp texture and fresh aroma of the peppers come together beautifully.
