I visited for lunch. The rice, seasoned with red vinegar and a touch of salt, has a unique flavor that becomes addictive as you continue eating. With the first piece of flounder, I could truly appreciate the distinct rice that Shimbashi Shimizu offers. I used to have a negative perception of the strong vinegar flavor in Edo-style sushi, but this experience completely changed my mind with its harmonious balance. Each piece of sushi showcased the craftsmanship, clearly reflecting the skill involved. I truly understood why Shimbashi Shimizu is regarded as a legend in the sushi world. On that day, I noticed sushi chefs from afar dining next to us. This is a place I would love to visit again when I'm in Tokyo. It was a great meal.
