I had dinner at LATURE, located in the Shibuya and Aoyama area. It was a wonderful experience that truly showcased why this restaurant has maintained its Michelin one-star status for many years and has received high accolades, including being listed among Tabelog's top 100 restaurants and winning a Bronze award.What stood out to me was how the chef's philosophy of "coexistence with nature" was expressed throughout the dishes. Chef Murata, who holds a hunting license, skillfully prepares game meat that embodies both strength and delicacy, reflecting a commitment to honoring the life of the ingredients. The macaron made with venison blood, known as a specialty, offered a refined flavor that defied my expectations, making it a unique experience exclusive to this restaurant.Each dish was not only delicious but also beautifully presented, with careful attention to aroma and temperature, providing surprises and delights with every plate. The game meat had minimal gamey taste, making it enjoyable even for first-timers. The wine pairings were exceptional, further enhancing the overall satisfaction of the meal.Despite being located underground, the restaurant offers a spacious and calming atmosphere, with attentive and warm service. It’s a perfect place for special occasions or meals with loved ones, as it encourages reflection on nature and life through the culinary experience. This is not just another "high-end French" restaurant; it offers a gastronomic journey with a story that can only be experienced here. I look forward to visiting again in a different season.
