After two weeks, I returned to Kuruma Sushi in Matsuyama, Ehime. The lingering memories from my last visit were still fresh, and once again, the experience was exceptional. Each dish showcased seasonal ingredients and meticulous preparation, enhancing my satisfaction with every bite.One standout was the steamed sweetfish sushi. The unique aroma and flavor of the sweetfish gently filled my mouth, and the warm temperature of the steamed sushi made it a truly delightful dish. The mackerel nigiri was also impressive. The smooth texture of the fish, its refined fat, and the harmony with the rice created a comforting experience, showcasing the craftsmanship rather than flamboyance.Then there was the red sea urchin from Ehime. Rich yet clean on the palate, the sweetness and fresh scent of the ocean were irresistible. Being able to enjoy local Ehime ingredients at this quality is one of the joys of dining on sushi in Matsuyama. There were countless memorable dishes, and once again, I was thoroughly satisfied from start to finish.The quality of the ingredients, the careful preparation that brings out their best, the pleasant flow of the meal, and the lingering aftertaste all make me want to return. Even after two weeks, I was reminded of how much I love this place. It was another fantastic experience. It was a great meal!
