The matsutake dobin mushi (matsutake mushroom steamed in a teapot) was outstanding, with a broth made from dried matsutake that had a nice acidity and a wonderful variety of flavors. The grilled matsutake was exquisite; I was told they had a great batch of matsutake this time. The size and shape were fantastic, and I was advised to eat it along the fibers, like playing a harmonica. It was truly delicious—juicy and full of umami. The matsutake okaki (grilled matsutake) was exceptional, packed with matsutake, and the rich matsutake juice flowed out from within. The koshitake mushrooms simmered with mustard were exquisite, with a perfect seasoning that highlighted the mushroom's umami. The nameko mushrooms and apple white miso dressing were exceptional.
