I finally had the chance to visit L'evo, a place I had long admired. Having wanted to go there for about 4 to 5 years, I was overwhelmed with emotion the moment I arrived.It took about an hour and a half from Toyama Station. The journey along the mountain roads was quite challenging, but I felt that the experience of heading to L'evo was part of the adventure.What struck me first was the atmosphere. The tableware, the space, and the overall decor were meticulously curated, creating a strong thematic presence reminiscent of a grand French restaurant. The time spent at the reception was very pleasant, adding to the sense of being in a different world.I was also shown the aging room and wine cellar, which allowed me to appreciate their dedication to ingredients and their approach to food.The dishes featured an abundance of mountain vegetables, while also showcasing the rich seafood of Toyama. The charm of local production for local consumption was clearly expressed.Particularly memorable were the bear, octopus, firefly squid, somen noodles, and dessert. Each dish had its own character and was incredibly delicious.The main dish of wild boar was easy to eat with no gamey taste, but the strong flavors of the accompanying mountain vegetables somewhat overshadowed the boar. I thought that if the boar had a more robust flavor, the balance with the mountain vegetables could be even more interesting.One slight disappointment was that there was no greeting from the chef at the end. In such restaurants, having a brief conversation with the chef is one of the joys, so that was a bit of a regret.However, even with that in mind, it was a truly unique experience, and I believe it is worth the trip to the mountains to dine at this restaurant.
