I was excited to experience the blend of tradition and modern cuisine crafted by a talented young chef at L'ecrin, a restaurant with over 50 years of history.Upon arrival, I confirmed my reservation at the reception and was guided to the waiting room on the lower level.After a bit of light conversation, a staff member in formal attire escorted us to the elevator leading to the dining area, where the maître d' attended to our seating.I promptly ordered the wine pairing.As I savored the Champagne from Drappier, I eagerly awaited the amuse-bouche. This Champagne, made from 100% Pinot Noir with zero dosage, offered a rich fruitiness and mineral character that was absolutely delightful.Soon after, the amuse-bouche was served.From there, a series of exquisite dishes and delicious wines followed, allowing us to enjoy a wonderfully comfortable atmosphere.The fish dishes were particularly impressive and delicious.Since its opening in 1974 in Ginza, L'ecrin has continued to shine despite various changes over the decades. The young chef is evolving the restaurant while preserving its traditions and elegance.I reflected on this story as I enjoyed my meal.It was a great meal!
